At Fulham Pier, every space has its own energy – from the public food halls to the refined Brasserie Constance and the buzzing Lighthouse Social – and our uniform design had to reflect that. Working closely with Fulham Pier Director Glen Sutton, Field Grey designed a collection that captures each of these distinct personalities. Our Readywear pieces were ideal for the lifestyle areas: durable cotton shirts, versatile aprons and our signature neckerchief give the team freedom to move while looking sharp. For the more formal settings we created bespoke touches, including tailored waistcoats for Brasserie Constance.
On our recent visit, we met some of the people who bring Fulham Pier — and our uniforms — to life every day.

Roselyn – Reception, Lighthouse Social
Roselyn loves the members’ club vibe – “great people finding other great people” – but music is her real passion. Her breakup ballad When in Rome hit over a million views on TikTok and record labels have been calling. ”I’m on the cusp of something, but I don’t know what it is,” she says. For now, you’ll catch her at the bar (ask about the lychee martini).

Daquane – Bartender, Brasserie Constance
We caught Daquane, a bartender for two years, pouring a Coffee Toffee – a twist on an espresso martini – his favourite drink to make. “When you shake it and see the foam appear, it’s great.” Off-duty, he reaches for a classic Negroni.

Sam – Barista, Lighthouse Social
He may have been a barista for two and a half years, but Sam actually doesn’t like coffee. “I just enjoy the artistic side,” he says, perfecting his latte art before the morning rush. ”On my days off I’ll usually avoid it unless I really need the boost.”

Nour – Waiter, The Lantern
At 19, Nour is still exploring what’s next. After a year of accounting and finance, he’s swapped spreadsheets for service. He dreams of becoming a police officer – ”I grew up on detective films like Rush Hour.” For now, he’s enjoying the buzz of The Lantern.

Callum – Bartender, Lighthouse Social
Hard Rock Café veteran, heavy-metal fan and cocktail “wizard” – Callum’s bar is as full of stories as it is spirits. He’s got tattoos galore (including an unfinished tiger his little sisters used to colour in) and a soft spot for spiced daiquiris. “It’s naughty but nice,” he grins.

Tomoka – Head Waiter, Brasserie Constance
From Michelin-starred kitchens in Tokyo to Mayfair and now Brasserie Constance, Tomoka’s an old hand at high-end hospitality. She misses Japan’s food scene but has a new favourite dish here: ”the claypot chicken. It’s roasted in a claypot with beer, with barley, which keeps it beautifully moist.”

Sam – Bartender, Lighthouse Social
Dishoom-trained and old-school to the core, Sam keeps his station spotless and his cocktails sharp. “Start with the cheapest ingredient first,” he says. ”If you add ice first, you’re just diluting the drink while pouring on top, and you want to control that.” His death-row drink? ”A whiskey sour, straight up.”

Florence – Waiter, The Lantern
Drama school alumni Florence used to design escape rooms for teams of 60, so she knows how to run a tight ship. She knows her rivers (thanks to a geography degree) – ”there are seals in the Thames – I’ve seen them!” and is now enjoying a change of pace, serving Asian-American small plates at The Lantern.
